Hey kinda late response but if this is still a problem for anyone just open activity monitor find Minecraft launcher and force quit it. It's not a perfect fix but it's better than rebooting your laptop every time you wanna play.

Whenever you open an application on macos, that application's logo will bounce up and down a few times and then open, but with Minecraft, it doesn't even bounce up and down. It just won't open.
Restart your computer or delete and then reinstall the game.
Don’t return the game but if u Have tried to return the game because it will stop the game from being able to load and the problem will look exactly like that
This happened to me today too
Mine does this too. Nfo.so I ran Minecraft on my last mac without a problem but I recently got a new one and can't get rid of this issue.
